Oatmeal nests with Enjoy Life Chunks

As I have told you, I was fortunate enough to receive a goody box from Enjoy Life a few weeks ago.
Like everyone else things are getting hectic, The holidays are here!
 I didn't want to post about my new goodies until I had made the perfect treat.

Enter: The Perfect Treat!
Oh yeah

 
I have been making and remaking this recipe that I found on Chocolate Covered Katie's page.
I am obsessed.
I have made a few changes to the recipe,  the first being that I doubled it.
I'm not making dessert for one!  That would be trouble ;)
I omitted the white sugar and use only the organic brown Florida cane sugar.
Katie's Recipe (with a mom-b twist)

Oatmeal Nests with Enjoy Life Mega Chunks
dairy free, egg free, soy free, gluten free, vegan

Nests
1/2 tsp. baking soda
1/4 tsp. salt
5 Tbs. Brown sugar
2 Tbs. coconut oil
3 Tbs. coconut milk (I like So Delicious)

Directions
1. Preheat oven to 375
2. Place dry ingredients in Magic Bullet or food processor and  mix until you see a flour like consistency throughout.
3. Pour dry mix into bowl and add oil and coconut milk and mix until it is a doughy like consistency
4. Spray mini muffin tins with vegetable oil, and roll dough into small 1 inch balls.
Press dough into muffin tin to make small cookie "nests"
Bake in pre-heated oven for 12-15 minutes
5. Remove from oven and allow to cool a bit.
Fill with your favorite allergy friendly filling

 Marshmallows
Organic crunchy Peanut butter
raisins

Ok, I know that Peanut butter isn't allergy friendly but it is here in our house (at least for today)
I made Peanut butter nests for TA
Peanut Butter and Enjoy Life Chocolate Chunks
S'mores for CKA
Marshmallow and Chocolate chunks
(these are the only ones that would not be considered Vegan)
Raisin for Roe-Roe
Plain Chocolate for me
and a couple of just plain oatmeal for whoever.


I was sent the Chocolate Chunks from Enjoy Life to do a product review.
To be honest, if for some reason tomorrow we woke up and were allergy free I would still purchase Enjoy Life brand chocolate chips and Chocolate chunks.
This is what chocolate should taste like!
It's funny, after being introduced to the complicated world of allergy eating i have found that i have become much more discriminating with my tastes.
When it comes to chocolate, a Hershey bar might as well be a skittle in my book. I want the real rich dark flavor, and Enjoy Life has nailed it.

YUM!!! Can't wait to try!!! have you tried rice-mallow?? It's like marshmallow fluff made with rice instead (and vegan!). I have some xanthum for you....will you guys be around tomorrow?
